(What is the " Yasuki steel "?)
"Yasuki Steel" refers to steel produced at the Yasuki Works of Hitachi Metals, Ltd., located in Yasuki City, Shimane Prefecture. This region has long been renowned as a production center for *Tamahagane*, the steel used for Japanese swords. Common varieties of Yasuki Steel used for cutlery include Blue Steel, White Steel, and Yellow Steel. These names originated from the practice of affixing colored paper to the finished steel to distinguish between the different grades.

In Japan, Blue Steel is primarily used for *sashimi* knives, while White Steel is typically used for *deba* knives. Because the sharpness of the blade subtly affects the flavor of *sashimi*, Blue Steel—which offers superior hardness and resistance to chipping—is preferred for *sashimi* knives.

Conversely, *deba* knives are used to cut through tough fish bones, so White Steel is used; while slightly more prone to chipping (often imperceptibly to the naked eye), this characteristic allows the edge to develop a micro-serration that bites into hard bone. In contrast, the harder Blue Steel tends to slip against the bone.
We recommend Blue Steel for cutting thinner materials (such as leaves) and White Steel for cutting thicker branches.
